The vines are generally established at planting distances of 2m × 1m.
The grading is strictly horizontal, because the soils are very permeable, no need for drainage ditches to drain rainwater. The sandy soil is soft and not very grassy.
Soil preparation is practiced in a traditional way: no ploughing, hoeing is done manually when necessary, chemical "weeding" is excluded.
Fertilisation is provided exclusively in organic form.
In addition to the major elements necessary for the vine, organic fertilizer provides a "balanced" diet for the stock, which ensures better "health" (increased resistance to disease) and higher quality production; the life of soil micro-organisms is also promoted.
Organic forms of fertilizer mainly use composted chicken manure to feed the soil.

The pruning is done during the winter period when the plants are in vegetative rest and the sap has descended.

Grape harvest is done manually. The nakama and the guests participate over several days in the harvest where everything is done by hand. Only the transport of the grapes to the place of vinification is done by truck. We work very early in the morning for a better freshness of all the aromas of the grapes.
Several weeks before the presumed harvest date, samples of the harvest are taken to analyze the sugars, the weight of the berries, etc.
The harvest is therefore carried out at optimal maturity; it is spread out on average from the last week of August to the end of September.
